'BEEF ON THE BONE'

STEWING, BOILING OR IN A CASSEROLE

This cut of Beef is great for stewing, boiling, or casseroling.

Please note the cooking method to guarantee soft tender
juicy lean meat, pulling away from the Bone, in tasty gravy.'

INGREDIENTS: 

  • One Kilo of Farmer’s Choice Beef on the Bone

  • Two white onions sliced

  • Two large carrots cleaned and sliced

  • Two green sweet peppers ,remove seed and chop

  • Two tomatoes cut into quarters.

  • One clove of Garlic crushed and chopped.

  • Salt, pepper, ginger, mixed herbs and mustard

 

Preparation time - two hours' night
before and thirty minutes next day

Method

1. Into a large cooking pot, pour a little oil, heat and add all your vegetables.
Fry for five minutes.
2. Add a pinch of each of your seasonings, or a teaspoon if you like your flavours strong and blend in to your vegetables.
Add your bone in Beef and fry until it is sealed again.
This should only take five minutes.
Cover your meat with water or stock; if you do not have any stock, water cooking is fine as the total recipe will create its own flavour.
3. Turn up the heat and bring to the boil.
Check your pot to make sure nothing is sticking to the bottom of the pot, then put a tight good fitting lid on the pot, turn down the heat to a simmer, and cook for four hours.
4. The best way is to boil the night before so you can bring to the boil, then simmer for two hours with the tight fitting lid then turn off the heat and leave the pot to slowly cool, but you MUST KEEP THE LID ON.
5. The next day bring the pot back to the boil, just 30 minutes before you need to serve it.
If you require thicker gravy, you can slowly add a little white flour and mix in.
